MSU news and notes for your Thursday morning.

1. The SEC softball tournament is being held at the newly renovated Nusz Park this weekend. The Bulldogs played Alabama last night in the first round, losing 7-5.

The SEC Network will bring SEC Now to the campus of Mississippi State on Friday for pre-game and post-game analysis of the semifinal games. They’ll set up just beyond the outfield wall.

2. MSU is spending the week in south Alabama, starting with the game in Troy last night and a series at Auburn this weekend. The Dawgs won 7-3 vs. the Trojans.

3. Two weeks ago we saw Beniquez Brown and De’Runnya Wilson go undrafted as underclassman – and De’Runnya still not signing with a NFL team. Now Arkansas head coach Bret Bielema is trying to get SEC coaches together to look at the NCAA allowing players to come back if they aren’t drafted.

4. Dan Mullen and Fred McCrary raised $35,000 at the annual Chick-Fil-A Peach Bowl golf tournament.

5. Dallas Cowboys think Dak Prescott has the “it” factor.

6. Food…..smoked mac and cheese – it’s so good.

Boil a 16 oz. box of large elbow noodles (macaroni) until they are al dente.

Then in a medium to large pot melt half a stick of butter. Once it melts, add:

  • 1/2 cup of all-purpose flour
  • one teaspoon of dry mustard
  • one teaspoon of salt
  • 1/3 teaspoon of paprika
  • 1/2 teaspoon of pepper
  • 4 cups of grated cheese (preferably cheddar)
  • 5 cups of half and half

Now you have to stir it, and keep stirring it until it really thickens up. Over medium heat this should take 5-8 minutes. While you’re doing this, fry about 6-8 slices of bacon.

Once the cheese sauce is thick, add it to the noodles (after you drain them, of course). Mix it all up and put half of it in a 9″ x 13″ x 3″ aluminum foil pan. Then put 2 more cups of grated cheese over the noodles and a handful of bacon crumbles (from the bacon you cooked). Add the rest of the noodles to the pan, then put another 2 cups of grated cheese over the noodles and the rest of the bacon crumbles.

The last thing to do is put it on the grill – which needs to be around 250 degrees – for 2-3 hours. The result is absolute deliciousness and will change your perception of mac and cheese forever.
