In the Junction – Southern Mississippi Edition
The Bulldogs and the Eagles first played each other in 1935. There has been a 24 year hiatus since these two teams met on the football field. The Bulldogs own a two game win streak and a 14-12-1 edge overall and look to extend that streak.
The Golden Eagles are coming to Starkville and we are ready to pluck some tail feathers. Let’s send “the team down south” packing with their first loss of the season. This is OUR STATE! Kick off is set for 6:30. So get that first tailgate up and ready plenty early to celebrate our first maroon and white victory of the new football season.

HONEYSUCKLE LEMONADE for WASHING DOWN THOSE GOLDEN EAGLES
Lemonade (I use Simply Lemonade from the dairy case.)
Catshead Honeysuckle Vodka
Lemon Slices
Fresh Basil Leaves
Mix one part lemonade and one part vodka and serve over ice cubes. Top with a lemon slice and and a basil leaf.
When possible prepare lemonade ice cubes with lemonade to keep your beverage from becoming diluted.
BEAT those EAGLES CHEESE WAFERS
1 jar Old English Sharp Cheddar Cheese Spread (found in dairy case)
1 stick butter
1 1/2 cups flour
1/2 tsp. salt
1 tsp. cayenne pepper
Bring cheese and butter to room temperature. Mix all ingredients together and roll into balls. Place on cookie sheets line with parchment paper. Press the tops of cheese balls with a fork to make a criss-cross. Bake at 375 degrees for 10 – 12 minutes or unti lightly browned on the bottom.
SOUTHERN MISSISSIPPI SIN DIP
1 loaf Hawaiin or French bread
1 (8 oz.) cream cheese, room temperature
2 cups grated Cheddar cheese
1 (8 oz.) sour cream
2 pkg. (3 oz.) thinly sliced ham, chopped fine
1/3 cup finely chopped green onions
1/3 cup finely chopped green bell peppers
Garlic powder to taste
Tabasco to taste
1 tsp. Worcestershire sauce
Mix softened cream cheese with sour cream unti well blended. Stir in ham, cheese, onion, bell pepper, garlic salt, Tabasco, and Worcestershire sauce; mix well.
Hollow out the center of the bread. Save this bread and tear into cubes for dipping. Spoon the mixture into the hollowed out bread. Wrap in heavy foil, bringing up sides and folding over the dip.
Bake at 300 degrees for 1 hour. Keep warm in foil until ready to serve. Serve hot with bread cubes and additional crackers of your choice.
ARTICHOKE those SOUTHERN EAGLE SQUARES
2 (6 oz.) jars marinated artichokes
1 onion, chopped
1 clove garlic, minced
4 eggs
1/4 cup dried breadcrumbs
Dash Tabasco
1/2 tsp. oregano
Salt and P epper to taste
2 cups shredded Cheddar cheese
Drain the juice from one jar of artichokes into a skillet. Saute’ the onion and garlic in this juice. Drain the other jar and chop all the artichokes from both jars. In a small bowl, beat the eggs, then add the breadcrumbs, Tabasco, oregano, salt and pepper. Stir in the onion and garlic mixture, as well as the cheese and artichokes. Mix well. Bake in a lightly greased 9 x 13 inch pan for 30 minutes at 325 degrees. Cut into squares and serve at room temperature.
SOUTHERN PASTA CHICKEN SALAD
1 (6 oz.) pkg. tri-color Rotini noodles, cookeD and drained
3 cups cooked, chopped chicken breasts
1/2 cup mayonnaise
1/2 cup bottled Italian dressing
3 Tbsp. lemon juice
1 Tbsp. prepared mustard
1 bunch green onion,sliced
3/4 cup sliced ripe olives
1 cup diced celery
Salt and Pepper to taste
Mix cooked chicken and prepared noodles with Italian dressing; allow to cool. Blend mayonnaise, lemon juice, and mustard. Stir in olives, onion, celery, salt and pepper. Add to cooled macaroni mixture. Mix well; chill overnight befoer serving.
SINFUL SOUTHERN BROWNIES
1 box brownie mix
3 large Symphony chocolate candy bars
Prepare brownie mix according to package directions. Pour half the mixture ina 9 x 13 inch baking dish that has been sprayed with Pam. Unwrap the candy bars and place on top of brownie mixture. Cover with the remaining batter and spread over candy bars. Bake according to package directions. Cool and cut into squares.
