Tailgating Recipes for the Bama game

Here are some tailgating recipes for the game against No. 1 Alabama.

ROLL  OVER   THE  TIDE   BLOODY  MARY

Beef Broth

V-8 vegetable juice

Vodka

lime

Worcestershire sauce

Tabasco

Pickapeppa sauce

Tony’s

For each beverage: Fill glass with half beef broth and half V-8.  Give 1 good jigger of vodka, 1/8 wedge of lime, several good squirts of Worcestershire, Tabasco, Pickapeppa sauce, and a good sprinkling of Tony’s. Stir and shake with ice to chill.

ARTICHOKE  DIP

1 cup mayonnaise

1 dry package Hidden Valley Ranch dressing

1 (8 oz.) can artichokes, drained and chopped

1 jar marinated artichokes, drained and chopped

2 Tbsp. lemon juice

1 tsp. Creole seasoning

Add all ingredients together; chill.  Great served with Wheat Thins.

THREE  CHEESE  PIMIENTO  CHEESE

8 oz. Jalapeno Monterey Jack cheese, grated

8 oz. mild Cheddar cheese, grated

8 oz. sharp Cheddar cheese, grated

1 can Ro-Tel tomatoes, drained

4 oz. diced pimiento

Mayonnaise (about 1/3 cup)  May need more

Combine all ingredients.  Use for sandwiches or as a dip.

ORANGE  MARMALADE  CHEESE  BALL

2 (8 oz.) pkg. cream cheese

1 cup slivered almonds

3/4 cup mayonnaise

1 pkg. Hormel bacon bits

2 cups shredded sharp Cheddar cheese

5 minced green onions

Jar of orange marmalade

Let cream cheese get very soft.  Use a mixer and mix the first 5 ingredients well.  Line a deep bowl with saran wrap so the ball will unmold easily.    Press the ball into the bowl to make a firm cheese ball; refrigerate overnight.  After unmolding to serve, use a knife and spread the ball with the orange marmalade.  Then cover with bacon bits; using your hand to pat the bacon bits on cheese ball.  Serve with you favorite cracker – Ritz and Wheat thins are great!

CRAWFISH  CORNBREAD

1 Jiffy cornbread mix

3 eggs, beaten

1 stick butter, melted

1 cup chopped green onions

1 can Ro-Tel, drained

8 oz. grated Colby cheese

1 bag (16 oz.) frozen crawfish, do not drain

Mix all ingredients and pour into a greased 9 x 13 inch baking dish.  Bake at 350 degrees for 45 – 50 minutes.  Cut into brownie size pieces and serve warm.  Cornbread will be moist.

MINI  BROWNIE  BITES

2 (10.25 oz.) pkg. Betty Crocker fudge Brownie Mix (bag not box)

8 oz.  sour cream

12 oz. semi sweet chocolate chips

1/2 cup chopped nuts

Prepare brownie mixes  according to package directions.  Add the sour cream and the chocolate chips and nuts.  Grease 48 miniature muffin tins; fill cups almost to the top.  Bake at 350 degrees for about 10 – 15 minutes or until toothpick inserted comes out clean.  Have a plate ready with a mixture of powdered and granulated sugar ready.  Release brownie bites from pan onto sugars.  Roll in sugar while still hot; place on wire rack to cool.
